I understood you want to see a video of a standard brewing procedure. You asked for the video before I did and mentioned the test with preground coffee. The cup was preheated, I always do that. I didn't know there was a relation between cup size and amount of crema.
I wouldn't really consider the test with preground coffee (and the opening of the drainage valve during it) relevant as it happened with much finer grind than what the machine itself can produce (and is therefore supposed to work with) as well as with higher amount of coffee. I think the drainage valve acted as safety valve since the powder puck had too much flow resistance, so it was opened by overpressure.
I usually brew ristretto lately (and I also did that in the video) because it has significantly less "bad" flavours which are covering the "good" flavours than espresso. The cup is always preheated with boiling water first so I see no issue there regarding possible temperature reduction, no matter how big the cup is.
I adjusted the grinder as soon as sb_NUE adviced that. There was no significant improvement. What do you mean with how many covers does the grinder have?
Increasing strenght (number of beans) doesn't improve the flavours either, it just makes the coffee stronger/heavier.
I made another video, I tried to reflect your remarks. The glass is preheated.

It has done around 5700 cups.
Most of the time we get coffee from local roasters, we are alternaning between ca. 5 types. All of them are light roasts. When we can't get anything local, we get some light roasts from Tchibo such as this one.
I can't get rid of the feeling that the grinder stones are worn out. There are really big pieces in the puck, see yourselves.
Before buy another machine, I'd like to try changing the stones. Do I need to buy ones for Nivona? There are spare parts for other brands such as Miele or Saeco which are cheaper and easier to get. They look identical.

Doesn't look too coarse to me to be honest.
But you could disassemble the grinder and check if the stones have any obvious damage.
You can't replace the stones of this grinder as there are simply none available on the market.

Grinding stones normally lasts about 15.000 Cups.
